Every Buzzard’s Roost whiskey begins in a traditional new oak barrel - then transforms in our custom-built secondary barrel. Each is toasted and charred to a specific profile designed to unlock notes like vanilla, spice, fruit, or smoke. This is not finishing. This is flavor design.

The SCIENCE of  FLAVOR
The Flavor Rack

From toasting maps to char curves, our secondary barrels are engineered to extract over 300 flavor compounds - vanillin, eugenol, guaiacol, and more. Each custom barrel in the Flavor Rack is built with a specific taste outcome in mind.

Buzzard Roost uses lightly charred barrels. These Char 1 barrels are scientifically proven to impart more flavor.


From GOOD to  GREAT
Deliberate at Every Step

We source premium aged whiskey and elevate it through a rigorous second-aging process in our own barrels. Our American oak is seasoned for 18 months - 3X longer than the industry standard - before being toasted and charred in-house. This extra effort delivers depth, nuance, and smoothness that defies proof.


We begin our whiskey journey by sourcing premium aged whiskies.

The whiskey then undergoes secondary aging in our custom barrels.

Our custom barrels are made from new American white oak and seasoned for 18 months to reduce tannins.

The staves are toasted and finished with a light Char #1.

The whiskey interacts with the wood’s “red layer,” creating rich and layered flavors.

Jason, a pioneer in whiskey bars, and Judy, a visionary brand builder, set out to create something new: whiskey that doesn’t chase trends - it sets standards.
